Put all ingredients for the wholemeal bread recipe together in a food processor and let it knead intensively with a dough hook for about 6 minutes.
Now transfer the dark dough to a large glass bowl sprinkled with flour and sprinkle again with a little flour. Cover the glass bowl with cling film and let the dough rest in a warm place for at least 50 minutes, until it has doubled in size.
Preheat the oven to 200°C top and bottom heat while shaping the bread dough into either a large loaf, smaller baguette loaves or bread rolls. Flour the finished shaped loaves well and bake on a baking tray with holes or in a baking pan with holes then for 35 minutes.
Let the finished breads cool and serve while still slightly warm. You can either enjoy the breads completely fresh or let them cool completely and even freeze them.

- 440 g water lukewarm
