I still remember how I always looked forward to visiting the steakhouse on my first trips to America. The flavour and friendliness cannot be compared with the steakhouses that were known in Germany at the time.
The anticipation of a juicy steak with dark sweet sauce and tender mashed potatoes was no less than the anticipation of dessert with warm chocolate cake with a soft centre. But right at the beginning, next to the huge ice-cold glasses of cola with free refills, there is always a dinner sandwich on the table.
Dinner bread often comes fresh and warm from the oven. As America is not exactly known for its bread culture, a dinner bread like this tastes a little bit simple. But when they brought me dinner rolls for the first time, bread for dinner took on a whole new meaning for me.
Dinner rolls or small brioches
Good dinner rolls are very soft and tender and immediately remind you of our brioche. If you’ve been reading my blog for a while, you’ll know my love of fresh brioche, soft brioche buns with delicious jams and spreads.
Especially at the weekend, delicious yeast pastries are simply part of my breakfast and I always find it difficult to decide whether I want an easy brioche, delicious chocolate buns as brioche buns or whether I want to make my dinner rolls from now on.
It is always a pleasure to enjoy the fresh, soft bread rolls. Although I also like my wholemeal breads, it has to be a sweet bread or bread rolls from time to time. This dinner rolls recipe is easy and quick to bake as you only need one pass. The small balls should hang together deliberately so that there is hardly any crust left on the bread when you pluck them off.
Especially in America, where even the crusts are cut off slices of toast, the dinner rolls recipe option is of course very popular as bread. Soft bread or super soft bread rolls without a hard or dry crust are therefore extremely popular.
Why not combine the tastiest aspects of brioche and make delicious mini brioche buns as buchtel or buchtel-style buns that are really fluffy and soft? Dinner rolls are basically like little brioche buns or mini brioches, with very little crust.

For me, dinner rolls clearly fit into the world of brioche and soft sweet bread rolls. A soft, moist yeast dough that falls apart on the tongue and is irresistible fresh from the oven. They look best in a casserole dish or rectangular baking tin and have a delicate golden crust.
Thanks to the mixture of flour, eggs, sugar and butter or margarine, these dinner rolls are a real treat for the senses with a rich texture and delicious, slightly buttery flavour.
The tender crumb and flavour makes these Dinner Rolls an ideal accompaniment to a variety of dishes, from breakfast to steak and savory dishes. It is best to serve savoury or neutral butter with these dinner rolls.

American dinner rolls recipe – soft rolls
Equipment
- 1 stand mixer
- 1 springform pan square
- 1 dough scraper
- 1 dough cutter
Ingredients
- 350 g cake flour
- 35 g sugar
- 3 g salt
- 14 g instant yeast
- 190 g whole milk 3,5% lukewarm
- 35 g spreadable butter warm, alternatively margarine
- 1 egg
- 4 tbsp whole milk 3,5% room temperature (for spreading)
Recipe-Instruction
- Firstly, heat the milk to room temperature and add the yeast, stir in gently and leave to stand.14 g (3.5 tbsp) instant yeast190 g (0.8 cups) whole milk 3,5%
- Mix the flour, sugar and salt in a bowl and then add the egg and butter. Allow the ingredients to mix slowly and then slowly add the yeast and milk mixture while stirring.350 g (3 cups) cake flour35 g (0.2 cups) sugar3 g (0.5 tsp) salt35 g (2.5 tbsp) spreadable butter1 egg
- Once all the ingredients have been mixed, knead the food processor on a higher speed for approx. 4-5 minutes until a homogeneous mixture is formed and the sides of the food processor are almost clean again. Start 5 minutes timer here
- Place the dough in a warm place without draughts and leave to rise for approx. 1 hour. Alternatively, you can also leave the dough to rise in a preheated oven (50°), then switch off and leave to rise for approx. 30-40 minutes. Start 40 minutes timer here
- Then remove the dough from the bowl (it should have roughly doubled in size) and spread it out on a floured work surface.
- Now divide into 12 equal pieces (approx. 55g per piece) and shape into round balls. Depending on the loaf tin or square springform tin, these can then be placed in a 3×4 format. Make sure you allow enough space, as these dinner rolls or brioche buns will more than double in size.
- Cover and leave to rise at room temperature for another 30 minutes. The balls should now have increased significantly in size. Start 30 minutes timer here
- Heat the oven to 180 °C and then bake the tin with the dinner rolls for 16 minutes. Start 16 minutes timer here
- Remove the Dinner Brioche Buns from the oven once they are baked and brush with the room temperature milk. This will give them a nice shine and keep the dinner rolls soft and fluffy for longer. If necessary, remove the springform tin and carefully transfer the buns to a wire rack to cool.4 tbsp whole milk 3,5%
