  • 250g snake cucumber
  • 1 vegetable onion
  • 75g feta sheep cheese light
  • 15 leaves of peppermint

Instructions for preparing the summer salad recipe

  • Cut cold watermelon and cold snake cucumber into cubes.
  • Peel and chop one vegetable onion.
  • Then add chopped parsley and chopped mint leaves.
  • Add the juice of one lemon and olive oil on top.

Especially because of the mint leaves, parsley and lemon juice, this summer salad tastes extremely fresh. The salty feta sheep cheese gives a perfect contrast to the sweet watermelon. We prefer to use vegetable onions, however, this healthy salad also tastes great with red onions. If you don’t like onions, you can of course do without them completely. We like to put a few mint leaves or whole cucumber slices on the salad for decoration.

This light watermelon salad is not only a summer salad for us, but also a perfect fitness salad. The salad tastes fresh and contains carbohydrates, proteins, vitamins and quite a lot of liquid. Especially in summer and after strenuous fitness sessions, the body is happy about this extra energy.

We are convinced especially the fresh feeling by the ingredients and the lightness mixed by the sweet and salty. Somehow we don’t feel guilty when we make this salad, but we are careful not to let it stand for long. Melon is known for the fact that you can quickly get gastrointestinal problems due to the bacteria on the peel.

Our tips therefore always buy whole melons in the store and best to clean the knife for cutting again and again in between. Afterwards, always store the melon pieces and the prepared salad in a cool place, preferably in an airtight tin, and of course eat them quickly.
