Wherever wholemeal flour is used, it is healthier for the body than pure white flour. Even if it is best to avoid carbohydrates from flour products almost completely, I cannot and do not want to do without them completely.
Our alternative is to use more wholemeal flour than white flour. Thanks to the fibre and vitamins contained in the husk, which is also processed here, the body can do much more with a wholemeal bread than with a pure wheat flour product.

Wholemeal spelt rolls recipe – delicious dark rolls
Equipment
- 1 stand mixer
- 1 dough scraper
- 1 baking tray
- 1 baking paper
- 1 glass bowl
Ingredients
- 250 ml water warm
- 250 g whole spelt flour
- 250 g white spelt flour
- 7 g instant yeast
- 35 g olive oil
- 5 g salt
Recipe-Instruction
- Dissolve the yeast in the water, preferably directly in a mixing bowl.250 ml (1 cups) water7 g (2 tsp) instant yeast
- Add the remaining ingredients and knead with the dough hook for approx. 7 minutes. Start 7 minutes timer here250 g (2 cups) whole spelt flour250 g (2 cups) white spelt flour5 g (1 tsp) salt35 g (2.5 tbsp) olive oil
- Now let the dough rest in the mixing bowl in a warm and draft-free place for one hour (cover with a fresh kitchen towel). Start 60 minutes timer here
- Now knead the dough again by hand and divide into 10 equal pieces. Shape these pieces into rolls and place on a baking tray lined with baking paper.
- Now brush the rolls with water and sprinkle with seeds (sunflower, pumpkin, linseed) if desired. Then leave the rolls to rest again at room temperature for approx. 20 minutes. Start 20 minutes timer here
- Preheat the oven to
240 °C. Before baking, cut the rolls lengthways with a sharp knife and bake in the centre of the oven for approx. 15-20 minutes..Start 15 minutes timer here
- You can also spray the buns with water while baking to make them rise even more.
