There is nothing better than having freshly baked bread in front of you. The smell and the anticipation of the soft and slightly crispy bread is tempting. Even though it’s easier to buy bread in a bakery, it’s different when you bake it all by yourself. You enjoy it even more when you know which ingredients are included in your wholemeal bread recipe.
You can also adapt the recipe a little to your own wishes and vary it slightly. You can always add the grains and seeds that you like and vary the sweetness a little, as in today’s recipe, the wholemeal bread recipe with spelt flour, a light spelt bread.
Delicious spelt bread made from wholemeal spelt flour
Bread made with wholemeal flour always tastes very healthy and keeps you full for longer. The advantages of wholemeal flour compared to white flour are easy to explain. While for white flour, such as easy wheat flour, only the endosperm is used for grinding, wholemeal flour contains a mixture of the endosperm, the bran and the germ of the grain.
Since the important fiber, minerals and vitamins are found in the husk and the germ, white flour is not as healthy as whole grain flour. The dietary fiber in wholemeal flour compared to wheat flour is very different.
Wholemeal spelt is ideal if you want a higher protein content, iron content and potassium content than is found in wholemeal wheat flour. Spelt also has more calories than wheat, but wholemeal spelt has less vitamin B3 and less fiber than wholemeal wheat.

Soft wholemeal bread recipe with spelt flour
We already love baking our easy wholemeal bread recipe using only wholemeal spelt flour, where the crust is really delicious and the bread inside is already really tempting. However, we have also found a mixture where the wholemeal bread recipe with additional light spelt flour becomes a fluffier, softer spelt bread. The crust remains delicious, but the inside of the bread becomes a little softer and has a slightly different taste.
In our wholemeal bread recipe with wholemeal spelt flour, the bread gets really nice and dark and smells tempting. However, it doesn’t get hard, but remains somewhat tender from the crust, although the crust becomes deliciously crispy. Just right for us and just as quick to make as our classic spelt bread.
Wholemeal bread recipe with spelt flour
Equipment
- 1 stand mixer
- 1 dough scraper
- 1 loaf pan
Ingredients
- 400 g whole spelt flour
- 200 g white spelt flour
- 7 g instant yeast
- 28 g honey
- 1,5 tsp salt
- 350 ml water warm
- 45 g margarine vegetable (e.g., sunflower) soft
Recipe-Instruction
- Put the flour, yeast, honey, salt and warm water in a mixing bowl and knead for about 5 minutes. Start 5 minutes timer here400 g (3 cups) whole spelt flour7 g (1 tbsp) instant yeast28 g (2 tbsp) honey1,5 tsp (1 ½ tsp) salt350 ml (1 ½ cups) water200 g (1.5 cups) white spelt flour
- Now let the dough rest in the mixing bowl in a warm and draft-free place for an hour (cover with a fresh kitchen towel). Start 60 minutes timer here
- Now melt butter and let it cool a bit before adding it to the dough and lightly mixing in the butter.45 g (2 tbsp) margarine vegetable (e.g., sunflower)
- Now put the dough into a greased loaf pan and let it stand, covered again, for 10 minutes until the oven is preheated. Start 10 minutes timer here
- Sprinkle bread with sunflower seeds, for example, if desired.
- Place a fireproof bowl with water in the oven – alternatively fill the cake tray with about 250ml of water.
- Now let bread bake for approx. 25-30 minutes at220 °C. Be careful when opening the oven, as a hot cloud of steam escapes each time.Start 25 minutes timer here
- Let the finished bread cool for about 10 minutes, remove from the mold, brush with a little butter and continue to cool. Then wrap the bread in aluminum foil, so it stays fresh and delicious for as long as possible.
Nutrition
Another variation is our wholemeal bread recipe with walnuts as a dinner bread. It looks super elegant and tastes just as good, but the crust makes it even more crispy.
