Instructions for baking the seed bread recipe
First, mix all the dry chopped ingredients (sunflower seeds, pumpkin seeds, almonds, chia seeds, flax seeds, psyllium husks, sesame seeds, walnuts and salt) in a food processor or by hand.
Then add the liquid ingredients (peanut butter, maple syrup, lemon juice and water) and let it mix well – it can get a little noisy :). I always let the batter mix on high for at least 5 minutes.
Put the dough in a baking pan (preferably with holes) lined with baking paper and press firmly. Then let it swell for at least 50 minutes. The longer you wait, the softer and more coherent the result will be. You can also leave the dough to swell overnight.
Preheat the oven to 180°C top and bottom heat and bake the bread for 35 minutes. After 35 minutes, remove the bread briefly from the oven, remove the baking paper and then bake for another 35 minutes without a mold directly on a wire rack or in a bread baking pan with holes.
Remove bread from pan afterwards (if one was used) and let cool. The bread retains a lot of heat and takes longer to cool than you are used to with other breads.

You can’t go wrong with the recipe and the bread always succeeds.
Grain bread recipe – easy homemade bread without flour
Delicious bread without flour sounds almost too good to be true. Healthy bread without yeast and without baking powder as a leavening agent sounds even better and easier. Our grain bread recipe is made mostly from seeds, or grains. It is considered low carb bread and is vegan because it is baked without eggs or milk.
Gluten-free bread and low carb bread
Our homemade seed bread grain bread recipe is considered mixed bread. The ingredients are just mixed and then the bread mixture is set aside to swell. The gluten-free bread is a quick grain bread that can either swell overnight or just an hour or two. The baking time of the low carb bread is about 70 minutes in total. Then, in our opinion, the healthy bread has the perfect consistency – crispy on the outside and tender on the inside.
Homemade seed bread – against ravenous attacks
Impressive how delicious a bread can taste, even without the classic bread ingredients. With typical flour bread we hardly get a feeling of satiety and rather stop eating out of reason. This is completely different with seed bread, where the desire for the bread is almost greater than you can really eat afterwards. The seed bread is a true substantial dish and therefore perfect to live healthier and not get cravings.
The best grain bread topping
There is nothing tastier than fresh grain bread with delicious toppings. Our favorite way to eat our seed bread is topped with fresh cheese. Also smear cheese with fresh radish or cucumber and chives tastes super healthy and delicious with the bread. Alternatively, we can recommend fried eggs or boiled eggs as a topping on the seed bread.
The bread tastes really healthy with an avocado or a sliced tomato. A sweeter combination tastes us with homemade jam or dark chocolate cream so really good.
Good ingredients in our seed bread recipe
We always have many of the ingredients for this delicious seeded bread recipe at home. Since we like to eat cereal and often bake similar dark breads, some grains and nuts have already accumulated in the pantry. By the way, I am still glad that psyllium husks have nothing to do with fleas. The husks are also known as psyllium and they are seed husks from plantain species, i.e. wild herbs.
Even if we do not live completely according to strict low carb rules or even vegan, we currently enjoy this bread very much. However, we are also always happy about our sweet milk rolls with chocolate or our fresh Ciabatta bread, as well as delicious classic Sunday rolls. The mix is what makes it so special for us and we are always happy to enjoy new recipes.

- 1 stand mixer
- 1 bread baking pan
- 1 baking rack
- 1 wire rack
Ingredients
- 240 g sunflower seeds
- 90 g pumpkin seeds
- 75 g almonds, chopped
- 80 g chia seeds
- 180 g flaxseed, ground
- 50 g psyllium husks
- 40 g sesame seeds, unpeeled
- 40 g walnuts
- 3 EL peanut puree alternatively almond paste or sesame paste (tahini)
- 1 EL maple syrup
- 1,5 TL salt
- 1 lemon squeezed
- 450 ml water lukewarm
Recipe-Instruction

- Put the dough in a baking dish with baking paper and press firmly. Then leave to swell for at least 50 minutes. The longer you wait, the fluffier the result will be. Start 50 minutes timer here
- Preheat the oven to 180 °C and bake the bread for 35 minutes initially. Start 35 minutes timer here
- After 35 minutes, briefly remove the bread from the oven, remove the baking paper and then finish baking for another 35 minutes without a mold directly on a wire rack or in a bread pan with holes. Start 35 minutes timer here
- Remove the bread from the mold, if one was used, and let it cool. The bread retains a lot of heat and takes longer to cool than you are used to from other breads.
Nutrition
If you want, you can add sesame seeds, sunflower seeds or pumpkin seeds to the bread before baking and press on. Grains as a topping make the seed bread even more crunchy.

yes you can toast this bread on a lower level of your toaster and it will become a yummy crunchy taste… – you can also take it out of the refrigerator and toast it immediately for breakfast…
