The classic stracciatella ice cream recipe is often a little milkier and harder in consistency. We have our recipe that makes the chocolate chip ice cream even softer and crunchier. Our base is a classic vanilla ice cream recipe that we have adapted slightly to suit our preferences.

Really dark dark chocolate for the stracciatella ice cream
The creamy sweetness of vanilla ice cream combined with dark chocolate, which ideally has a cocoa content of 72%-81%. We really like this dark chocolate combination. On its own, this dark chocolate is really very bitter, but in combination with a creamy vanilla ice cream it is simply perfect.
Traditionally, dark chocolate is always preferred in the stracciatella ice cream recipe, as its strong aroma and tart sweetness harmonize perfectly with the creamy base of the ice cream. Ideally, the chocolate should be of high quality to enhance the full flavor and texture of the ice cream.
However, you can also make the stracciatella ice cream recipe with a milky or white chocolate. The result has a milder and sweeter flavor and is very popular with children. However, this differs from the traditional preparation.
The chocolate should be finely chopped or broken into small pieces so that it can be evenly distributed in the ice cream. While some like larger pieces of chocolate, others prefer a finer texture that melts more easily in the mouth.

Origin of the stracciatella ice cream recipe as vanilla ice cream
The name “stracciatella” comes from the Italian and means “shattered” or “crushed”. It is a fitting name for this ice cream, which is created by adding finely chopped pieces of chocolate during the freezing process.
The origin of this type of ice cream takes us to picturesque Italy, where it was invented in the 1950s at the Gelateria Fontanella in Bergamo. An Italian ice cream maker named Enrico Panattoni was looking for a way to spice up his vanilla ice cream and decided to pour thinly molded chocolate into the soft ice cream.
The resulting mixture of creamy ice cream and delicate chocolate pieces quickly won the hearts of customers and became a timeless classic in ice cream parlors around the world.
Stracciatella ice cream recipe – vanilla ice cream with chocolate
Equipment
- 1 Ice cream maker
- 1 hand blender
- 1 cooking pot
- 1 kitchen-thermometer
Ingredients
- 4 egg yolk
- 250 g whole milk 3,5%
- 250 g whipped cream
- 1,5 tsp vanilla extract
- 40 g sugar
- 10 g glucose can be left out – makes the ice cream extra creamy
- 1 tbsp lemon juice
- 50 g chocolate chips (dark)
Recipe-Instruction
- First, pour the whole milk and whipping cream into a cooking pot and slowly heat up.250 g (1 cups) whole milk 3,5%250 g (1 cups) whipped cream
- In a tall mixing bowl, mix the egg yolks, juice of a freshly squeezed lemon, sugar, vanilla extract and dextrose well with a hand blender and add to the warm pan.4 egg yolk1,5 tsp vanilla extract40 g (0.2 cups) sugar1 tbsp lemon10 g (2 tsp) glucose
- Bring the mixture to 83 °C in the pot, stirring constantly, and remove from the heat.
- Leave to cool for approx. 50 minutes until the mixture is no longer warm to the touch. Start 50 minutes timer here
- Once cooled, pour the mixture into the ice cream maker and chill and mix according to the ice cream maker instructions.
- As soon as the ice cream in the ice cream maker has a slightly firm consistency (in our ice cream maker after approx. 5-6 minutes), slowly add the chocolate chips.50 g (¼ cups) chocolate chips (dark)
- Depending on the ice cream maker, the cooling time and production time of the delicious and simple stracchiatella ice cream takes around 10-20 minutes.
- Pour the finished ice cream into beautiful bowls and decorate with fresh fruit, sauces or Smarties and other crumbles, if desired, and enjoy.

Whether you enjoy it in a cozy ice cream parlor in Italy or make it yourself at home, stracciatella ice cream is a real treat. If you make our stracciatella ice cream recipe fresh, you can eat it straight away or freeze it for extra firmness.
As we prefer creamy ice cream, we usually eat the fresh ice cream and simply keep the leftovers, if any, in the freezer afterwards. However, you should note that homemade ice cream does not contain any plasticizers or preservatives and therefore needs a little more time to thaw before it is really creamy again.
