Strawberries have a sweet, juicy and slightly tart flavor with a natural taste. Strawberries can generally be combined in a variety of ways. They go perfectly with other fruits, nuts, chocolate or cream.
Depending on how they are made and your preferences, strawberry ice cream is suitable for sorbet, milk ice cream and yogurt ice cream. In all variations, strawberries show just how versatile they are. Strawberries are particularly sweet in the milk ice cream version, while they have a natural effect in sorbet and a harmonious tart-sweet effect in the strawberry yogurt ice cream recipe.
While traditional strawberry ice cream consists purely of pureed strawberries and sugar, strawberry yogurt ice cream adds a creamy component: yogurt. A slight acidity that provides a balanced flavor combination by balancing out the sweetness of the strawberries and giving the ice cream a refreshing note. Different colors of strawberry ice cream
What is noticeable about strawberry ice cream, however, is that the color tones always vary. Sometimes the ice cream looks dark pink and sometimes rather pale pink pastel. What are you doing wrong? What is the reason?
Strawberries are naturally different in color. This is often not even noticeable unless you make strawberry ice cream directly from the strawberries. Even frozen strawberries vary in color and aroma. It can vary completely depending on the harvest, even if the bags look identical.
Some strawberry varieties tend to produce intensely red fruit, while others may have lighter or even slightly greenish hues. The color of the strawberries used therefore also influences the color of the ice cream made from them.
The ripeness of the strawberries can also influence the color of the ice cream. Riper strawberries tend to have a more intense red color and can give the ice cream a richer color, while less ripe or greener strawberries tend to produce a paler pink.
Pureeing the strawberries can also result in a more intense color, while chopping or mashing the fruit can result in a more mottled or pastel appearance.
Of course, the other ingredients in the strawberry yogurt ice cream also produce a different color, depending on the milk, cream, yogurt and sometimes even food coloring. The color of our strawberry yogurt ice cream recipe is also always slightly different.
Fresh strawberries in the strawberry yogurt ice cream recipe
One question that often comes up when it comes to preparing our strawberry yogurt ice cream recipe is the choice between fresh strawberries and defrosted frozen strawberries. Both options have their advantages and disadvantages.
Fresh strawberries in our Strawberry yogurt ice cream recipe offer the full flavor and freshness of the fruit. They are ideal when they are in season and locally available. Their texture is firm and juicy, resulting in an intense taste experience.
Defrosted frozen strawberries are the convenient and often cheaper alternative. They are available all year round and retain most of their flavor and nutrients as they are usually frozen immediately after harvesting. They are good for making ice cream as they are already soft and easy to puree.
Ultimately, the choice between fresh and defrosted frozen strawberries depends on personal preference, availability and time. While you can use frozen strawberries immediately after defrosting, you still need to remove the green leaves from fresh strawberries and clean them.
One thing is certain, fresh strawberries also contribute to the freshness and quality of the ice cream and make it more enjoyable. However, frozen strawberries are the more convenient option all year round.
