Instructions for making the brownies
Melt butter in a larger saucepan on a stovetop. Add gingerbread spice, baking cocoa and honey and stir to combine. Add eggs and milk and mix as well.
Prepare a mixing bowl with flour, sugar, baking powder and baking soda and add the warm liquid chocolate spice mixture and mix.
It is best to put the finished dough on a baking sheet lined with baking paper and baking frame (about 20x30cm).
Bake at top and bottom heat on preheated 180 degrees for about 20-25 minutes. For the filling, the cake must cool down a bit, so that it can be cut once crosswise and folded open. Then spread the two sides with jam, depending on the desired amount, and fold together again.
Melt the chocolate and some butter in a water bath and spread over the cake. Now spread walnuts (as whole pieces or chopped small) on the still liquid chocolate. After the cake has cooled, cut it into small brownie pieces and store them in a tin.

If you want to vary the chocolate brownies recipe a little you can of course add some cinnamon or omit the gingerbread spice after Christmas and use a little more baking cocoa. You can also omit the jam filling if you prefer cakes without jam. If you like it even sweeter you can also use a layer of chocolate spread for the filling.
In our version, we put the chocolate frosting all over the cake and cut the cake into little brownie pieces before the chocolate had cooled. This creates a nice light chocolate glaze on each piece. If you like it even more chocolatey you can also cut small pieces first and then pour chocolate over each small brownie piece.
Through our decoration with walnuts, the brownies still get a golden shine, which just fits perfectly with noble cake plates and makes the brownies look even shinier.

- 200 g all-purpose flour
- 200 g sugar
- ¾ tsp baking powder
- 1 ⅓ tsp baking soda
- 100 g spreadable butter
- 2 tbsp gingerbread spice
- 2 tbsp baking cocoa
- 2 tbsp honey
- 3 eggs
- 200 ml whole milk 3,5%
Filling & Decoration
- 150 g plum jam quantity and flavor variety may vary
- 100 g chocolate chips (dark)
- 5 g spreadable butter
- 100 g walnuts

True, this cake tastes especially good at Christmas. However, with a few small modifications, it also tastes good in the summer. You can sprinkle coconut flakes on the chocolate instead of nuts. With the jam one chooses then strawberry as taste. The gingerbread spice is omitted completely and you have a summery chocolate cake variant.
