The chocolate cake with dark chocolate is quite chewy inside and deliciously crunchy outside.
Instructions for preparing the chocolate cake recipe
First, dissolve the chocolate into a liquid mass. I like to use a water bath for this with a large saucepan in which I then mix all the ingredients. Once the chocolate has melted, I first add sugar and wait for the sugar to dissolve.
Then I add butter and mix it until the butter is melted. Separate the four eggs and add the four egg yolks to the mixture.
Now add sifted flour and almond semolina by the spoonful.
Beat the egg whites in a mixer until fluffy and then add the beaten egg whites by the spoonful to the mixture. When everything is mixed, you can pour the batter into any greased mold or several molds.
The cake now goes for about 25-30 minutes in the oven, which was preheated to 180 degrees Celsius.
Let the cake cool after baking, remove from the mold and sprinkle with powdered sugar. I can recommend you to put some strawberries next to the cake, because they always taste delicious with chocolate.

I still remember the first time I ate this cake at Lösch für Freunde Hotel, as it was in my room as a welcome back then. The cake has a tradition in the hotel and the affiliated Hornbach Monastery. When there is something to celebrate, sometimes there is the cake in a beautiful wooden box as a gift. A great gesture and for me one of the most delicious cakes.
I also remember when I baked my raspberry chocolate tartlets together with Olivier Fabing in the beautiful kitchen of the country house. Today I’m in the kitchen myself baking for you. You can give the cake in different forms and bake. I chose four greased metal rings about 15cm in size, placed on a baking paper and baking sheet. The dough does not run out even without a bottom.

- 200 g chocolate chips (dark)
- 165 g sugar
- 175 g spreadable butter
- 4 egg yolk
- 40 g all-purpose flour
- 40 g almond semolina
- 4 egg white
Recipe-Instruction
- Melt chocolate pieces or drops in a large water bath.200 g (1 ⅛ cups) chocolate chips (dark)
- Add sugar and let dissolve, then add butter and let melt165 g (⅘ cups) sugar175 g (6.10 oz) spreadable butter
- Separate eggs in advance and stir the yolks into the mixture.4 egg yolk
- Mix sifted flour and almond semolina with the chocolate mixture by the tablespoonful.40 g (⅓ cups) all-purpose flour40 g (⅛ cups) almond semolina
- Whip the egg whites with a stand mixer and then fold into the mixture one spoonful at a time.4 egg white
- Pour mixture into any greased mold or molds and place in oven preheated to 180 °C.
- After 25-30 minutes, depending on the shape and thickness, the cake is ready and must now cool slowly. Start 25 minutes timer here
- To serve, sprinkle the cake with powdered sugar and serve with some fruit.
